After de-stemming and a soft crushing, Touriga Nacional grapes were cold macerated for a period of 5 days. Fermenting was done at low temperatures (24°C) in stainless steel vats, to preserve freshness. The wine remained in post-fermentative maceration for 21 days and after malolactic it was aged in old French oak barrels. Syrah grapes fermented at 26°C having completed the process in new French oak barrels, were malolactic occurred. The wines matured in 225 litters barrels, for 18 months. The final blend was made after a quality selection guided by numerous tasting tests.
